It’s been a few days since I’ve posted; I have just been so busy! Do you ever feel like you can’t keep up with your life? As a teacher, May is always a frantic month finishing classes, grades, awards, graduation, scheduling… the list goes on and on! It’s gotten bad! I am trying to save time anywhere I can so I only painted the toes that stick out of my sandals, I only shaved my legs as high as my skirt goes, and I’ve worn my hair in pony tails for the last couple weeks. Yeah, it’s pathetic I know. I have a good husband that tries to hold back his laughter as he watches me regress. So as much as I love blogging May will be a difficult month to find time. I’m breaking out the casseroles and crock-pot, 3 more weeks of mayhem. Pray for me!
Ingredients
1 pound medium raw shrimp, peeled and deveined
2 tablespoons chopped garlic
1 tablespoon Italian seasoning blend
½ cup butter, cut into pieces
Sprinkling of salt and pepper
½ fresh lemon juice
Directions
Place your shrimp in a baking dish (my shrimp were still frozen). Sprinkle garlic, Italian seasonings, pieces of butter, and salt and pepper onto of the shrimp. Cook uncovered at 450 for 10-20 minutes stirring every 5 minutes. When all the shrimp were almost pink I turn the oven to broil and broiled it for a couple minutes. The broiling really helped the herbs and garlic stick to the shrimp. Squeeze lemon juice on top of the shrimp and serve!

I thought it was so cute the way you "confessed" all of your regressions. It was almost like you were confessing that you had done something really evil LOL. Looks to me like you had time to make your family a fabulous dinner. Hang in there Carrie.

Shrimp looks good. Thanks for sharing. First time to your blog and I will peak back again because I love to bake. Cupcakes from your past post look so good. My Mom use to make the icing with the Crisco. I can bake but decorating the cupcakes is not for me. Let's just say that I am decorating challenged when it comes to cupcakes:)
